Let's have fun with this. To help bring us together and to have a group experience, make this summery cold cucumber soup. It can be made up to 48 hours in advance and we can all eat it together. Of course, this is an optional activity. Recipe follows:
Cold Cucumber Soup Courtesy of the California Heritage Cookbook, 1976
2 large English cucumbers
1 clove of garlic
3 cups chicken broth
2 cups sour cream
1 cup yogurt
3 Tablespoons white vinegar
2 teaspoons salt
2 teaspoons pepper
chopped chives (optional)
Peel and dice the cucumbers. Place about one third of the cucumbers in a blender with a small amount of chicken broth. Add the garlic and puree. Pour into a large bowl. Do the same with the other two thirds cucumbers and reserve about one half cup chicken broth. Add the sour cream and yogurt to the blender with the remaining broth. Puree. Add to bowl. Season with vinegar, salt and pepper. Chill for 6-8 hours. Serve with chives if desired.
